This week, we’re diving into the delightful, often misunderstood world of Italian bitters—Amaro. Don't let the name scare you! In Italian, amaro simply means "bitter," but that one word hides a symphony of flavors. Think orange peel, gentian root, caramel, and a secret garden’s worth of herbs. They were originally created as medicinal digestifs, but today, they are the secret weapons of bartenders everywhere.
Our goal here at Port City Two Liquors and Wine is to educate customers on niche products. We want to move beyond just the basics, and Amaro is the perfect place to start. The easiest way to get acquainted? The Black Manhattan. It’s a sophisticated riff on the classic, swapping sweet vermouth for a rich, dark Amaro. It’s silky, herbal, and deep.
The Black Manhattan
2 oz Whiskey (We love a spicy Rye here at Port City Two Liquors and Wine!)
1 oz Amaro Averna (or your favorite dark Amaro)
2 dashes Angostura bitters
1 dash Orange bitters
Garnish: A dark, luxurious Luxardo cherry
Instructions: Stir all ingredients in a mixing glass with plenty of ice. Strain into a chilled coupe. Garnish and enjoy.
This cocktail is fantastic on its own, but we highly recommend pairing it with dark chocolate squares or a slice of pecan pie. The bitterness of the Amaro cuts right through the richness and sweetness, balancing your palate and making you want another sip.
